Our collaboration with celebrity chef Nick Nairn has been established for several years, ever since he opened The Kailyard restaurant in the hotel. His selection of menus feature signature dishes, special dishes made just for us and traditional Scottish cuisine with a modern twist.
More About Nick
Nick grew up in the Port of Monteith in Stirlingshire and after high school he joined the merchant navy. On his return to Scotland in the 1980s he opened his first restaurant, Braeval, near Aberfoyle.
In 1998, Nick opened Nairns restaurant in Glasgow and Nick Nairn Cook School at Lake of Menteith in 2000. He opened a second Cook School in Aberdeen in 2012.
As well as restaurants, corporate work and cookery schools, since the 1990s Nick has been a regular on TV cookery programmes, including the wildly popular Ready, Steady Cook, Saturday Kitchen, Landward and most recently the Paul and Nick Big Food Trip series.
Paul & Nick’s Big American Food Trip
Celebrity chefs and good pals, Nick Nairn and Paul Rankin, first teamed up for series one of Paul & Nick’s Big American Food Trip where the chefs toured the US discovering traditional local food and cooking up some regional delicacies with their own unique twist. The pair take a culinary trip around America, concentrating on areas with Ulster-Scots roots and uncovering the legacy of how those immigrants changed the flavour of American cuisine and cooking.
Series two started a few weeks ago and began with the duo cooking for the former White House Press Secretary and his family in Washington DC. From East Coast oysters to peanut butter cheesecake (pictured above), Nick and Paul create unforgettable recipes that you can easily try at home.
