I believe this iconic hotel deserves a restaurant to match, so I´m delighted to be working with the guys at DoubleTree Dunblane Hotel to make it the destination of choice for locals and guests alike, whether they´re here for business, pleasure, or a bit of both.
As a local lad, I´ve visited the Dunblane Hydro Hotel many times throughout the years. I´ve grown up around it, so it´s great to see it refurbished to reflect its true glory as the quintessential Scottish hotel destination, with magnificent surroundings, breathtaking architecture and a luxurious contemporary interior design.
At The Kailyard by Nick Nairn Restaurant, I aim to complement and augment DoubleTree Dunblane´s undoubted qualities with my own lifetime culinary philosophy of what´s required to create great food: sourcing the finest Scottish ingredients - in-season and locally produced where possible - and employing the skills of a great chef to do them justice!
I´ve been working closely with the kitchen brigade - supported by my Executive Chef Colin Halliday - to create simple, harmonious cuisine that will excite your palate. We´re constantly developing new and exciting dishes, and I´ll continue to work closely with the hotel team to develop its entire food and beverage output so that guests can enjoy superb food throughout the hotel.
