Growing up locally, Nick was a regular guest at the hotel in his youth. His renowned expertise and love for Scottish cuisine make him the perfect match for our elegant restaurant.
Once Scotland's youngest Michelin star winner, Nick is a firm believer in the 'farm to fork' philosophy, sourcing the freshest local ingredients wherever possible. Supported by Executive Chef Colin Halliday, Nick has created a simple menu of harmonious classic cuisine that will excite your palate.
